In lieu of the Barrel Room Sparkling Brunch, we are hosting Sparkling Sundays through Christmas week. A celebration of the release of the 2013 Blanc de Blancs, made from Chardonnay grown on the steep limestone slopes of the Argetsinger Vineyard. Aged en tirage since 2014 and disgorged and finished in the early months of 2020, it is ready for release. Bright and elegant with notes of lemon curd, brioche and beautiful, ethereal minerality, this elegant sparkling wine makes a wonderful aperitif, pairing with savory dishes, or the centerpiece of a celebratory toast.
We have created a neat flight with the 2013 Blanc de Blanc, 2012 Sparkling Brut and the 2018 semi-sparkling Ayre. Chef Lisa of the Ravinous Kitchen has paired the sparklers with a savory tart made with caramelised onion, smoked bacon, Underpass cheese and garden thyme, whole ingredients from our local farmers.
