A glimpse into winegrowing in the Finger Lakes and winemaking and food pairing at Ravines: Gather in the barrel room of our historic barn and learn about the century-old tradition of making sparkling wine in the Finger Lakes with a demi-glass of Ravines 2013 Brut Sparkling Wine, aged en tirage for 7 years before being hand-riddled and finished using the Methode Champenoise. Hosted by Sommelier and international wine judge, Bob Madill, guests will be guided through the process of wine making and barrel aging whilst sitting among the large Austrian casks in the wine cellar. Compare a cask sample to finished wines and learn how wines evolve during levage. At our farm table, guests will enjoy a tasting flight of our five top wines served in fine Riedel glassware with a small plate of savory bites prepared by our chef.
