Ravines Wine Cellars

Pinot Noir 2010

A beautiful expression of a cool-climate Pinot Noir. The old world elegance of this wine outclasses the clumsy American style with its delicate finesse, classic balance and lower alcohol level. The fruit profile is not big and jammy, but shows fresh fruit and floral aromas: cherries, plum and violets which is complemented by a sous bois (underbrush) character; sticks, leaves, earth. The velvety texture of this wine is unmistakably Pinot Noir and the long finish is the undeniable mark of a winemakers careful attention to detail.

Vineyard Notes
All of the Pinot Noir comes from the 16 Falls Vineyard on the East side of Seneca lake. 2010 was a remarkable vintage in the Finger Lakes with ideal conditions: a long, warm and sunny growing season and no significant disease pressure. The grapes were hand harvested under ideal conditions in late September.
Production Notes
The grapes were de-stemmed into open top fermenters at low temperature for pre-fermentation maceration. After starting as a whole berry fermentation, multiple daily punch-downs and pump-overs were conducted. The Pinot Noir was given more than three weeks of skin contact prior to pressing. At pressing, skins were hand bucketed out to leave behind most of the seeds and sediment and avoid sources of astringency. Malolactic fermentation took place in barrels for improved texture. The barrels used were all French oak, one, two and three years old with only 10% new oak. Prior to bottling, the wine recieved a slight filtration.
