Our first ever Dry Riesling that was not aged in exclusively stainless steel. This estate Riesling was aged in our 2000-liter Austrian casks for ten months before bottling. Hints of cashew and butterscotch intertwine with lemon, orange marmalade and nectarine. You'll still note the classic minerality, acidity and lift of a classic Ravines Dry Riesling, but it finishes with more weight and softness. A Chardonnay-lover's Dry Riesling that will pair well with richer dishes like butter poached halibut or chicken cordon-bleu.
Named "Chef & Winemaker" Cask-Aged Dry Riesling, after the Ravines owners, Lisa (Chef / wife) and Morten (Winemaker / husband) Hallgren. They write on the bottle, "The Chef & the Winemaker were in the wine cellar in the spring of 2020, tasting and evaluating the new 2019 Riesling vintage, batch by batch. While tasting the cask of Rielsing, the winemaker commented that he would like to blend this wine because some of its brightness was veiled by the nutty flavors imparted during aging on the full lees in large oak casks. The Chef disagreed, envisioning many opportunities to pair the wine with a bounty of exciting dishes that would benefit from its rich texture and toasty aromas. The promise of a great new food and wine pairing won the day and the wine was bottled ."
