Valvin Muscat is usually the first grape variety to be picked in our White Springs vineyard. It was harvested on September 20 in excellent condition with moderate sugar and good acidity. After gentle pressing and careful racking yielding a very clear juice, the Valvin Muscat was slowly fermented at low temperature in a stainless steel tank. The low temperature helped preserve the bright fruity aromas. We stopped the fermentation after reaching a modest alcohol level, thereby leaving significant residual sugar in the finish wine. The tank was rapidly sealed and kept cold, which allowed us to retain most of the effervescence produced during the fermentation. The wine was bottled very early with minimal manipulation to retain as much of the freshness and carbonation as possible.
