Mostly hand harvested, red blend of 57% Cabernet Sauvignon and 43% Merlot. This wine showcases beautiful, dark cherries, blackberry juice, baking spice, eucalyptus and savory herbs pepper from our estate vineyards on Seneca Lake. In this exceptionally warm and dry vintage, the harvest was early, under optimal conditions with lower yields and high ripeness.
All lots were destemmed into open top stainless steel fermenters with manual punch-downs and pump-overs. Extended skin contact, ranging from 3 to 4 weeks preceded spontaneous malolactic fermentation in 80% French oak barrels, and 20% American oak barrels with 18% new oak barrels overall.
