The nose shows great fruity intensity with aromas of melon, lime, and tangerine as well as grassy notes. In addition, the wine displays noticeable floral and mineral components which results in a complex aromas. This is a very lively, fresh, fruity off-dry wine with just enough sweetness to balance the acidity.
Both Cayuga and Vignoles are French-American hybrid varieties particularly well suited to the Finger Lakes region. The Cayuga grapes are picked early before they develop a noticeable labrusca-like character. Given the early Harvest date for Cayuga, the acidity in the grapes is still very high, so unlike our vinifera wines, we leave a little residual sugar to balance the acidity. The Vignoles is picked at normal ripeness level to provide a very fruity blending component.
The grapes are pressed very gently and ferment the juice at low temperature using yeast strains that favor a long cool fermentation in order to retain the maximum fruit intensity. The components are left on light lees during the aging process in stainless steel tanks. The lees are occasionally stirred to improve the mouthfeel and soften the wine. Prior to bottling, the components are blended, the acid/sugar balance is adjusted if needed and the Keuka Village White blend is fined and filtered.
